Limited Ramen 2012 : 「女性が1人でも気軽にラーメン屋に入れるように」と言うコンセプトで2011年に創業した 株式会社ソラノイロ公式サイトです。 麺スープトッピング全てに野菜を使用した「ベジソバ」 ベジタリアン向け「ヴィーガンラーメン」 小麦アレルギーの方向け「グルテンフリーラーメン」も日本で1番早くグランドメニューに取り入れています。 各店舗メニュー、店舗情報などをご紹介します。

White SORANO Noodles

SORANOIRO’s 3rd limited ramen,
was a soy milk soup with white miso-based mellow noodles.
With the base made from the white miso from Kyoto, and Miso sauce from Sendai,
we add it to the soup made from soy milk, and scallop stock with konbu stock.
As for the oil, we use the oil made from fried shrimps aroma with spicy red pepper.
For the noodles, we mix it with milk.
For toppings, we use pork shabu meat, cauliflower,
broccoli, white green leek, scorched rice, scallop,
and fried shrimps.

Today's Store Manager's Meal Wonton Noodles

The wonton that debuted this year is now officially on the menu!
The texture of the minced meat with the slippery wonton skin
give it a new charm to the Chinese soba.

Spring Tea Noodles

The noodles is mixed with the best hojicha made from Ippudo Tea, an old shop from Kyoto.
The soup is made from konbu, shiitake, and dried bonito as base,
then mixed with shio-based sauce and hojicha powder.
There is the aroma of dried bonito as well as the hojicha as well!
As for the ingredients, we have pickled horse sashimi from horse meat sent directly from Kumamoto,
you’ll be surprised what is actually in there!

《Revived》Mussle Veggie Tsukesoba

Using the stock made from pork bone, and fish and seashells,
then mix with carrot puree into the soup, and cook it with mussles,
and lastly mix with salt-based sauce, then it will be perfect!
Combining the noodles mixed with paprika powder,
along with the special aromatic oil,
is our store manager’s preference!
You may also add yuzu pepper and grapefruits to change the taste!

Olympic Noodles

This time our limited menu is
the “Olympic Noodles” which was started by SORANOIRO Miyazaki,
as he wanted to make a plan for youngsters to change Japanese ramen (temporarily)!
We have created a salted flavour Chinese noodles named “SORANOIRO’s Olympic Soup Dish”!

Red Plum SORA Cold Noodles

This year for cold noodles,
we have the theme of red and pickled foods with umeboshi.
For noodles, we have thin noodles mixed with umeboshi.
For soup, we mixed it with plum vinegar and Chidori vinegar.
To change the flavour, we also provide honey salted lemon paste!
Please enjoy the taste of sweetness, sourness, and bitterness.
For toppings, we have pickled foods perfect for summer.
We have pickled purple cabbages, sweet and sour pickled new ginger,
pickled red paprika oil, yam and dried plum,
along with chicken breast cooked in low temperature with salt,
with marinated egg, and Nakata Food’s rural pickled plums.

SORA and Dragon's Refreshing Shio Chinese Soba

We were able to provide this limited to 2 days only,
through the collaboration at Daimaru event together with
“Sakai Specialized in Shio Ramen Ryukishin”, a famous shop in Osaka.
Ryukishin’s store owner Matsuhara as always been very friendly since the Ippudo period,
so I was very happy to see this come into reality.
This is a special ramen made with the trump cards in Ryukishin: “Mussle Shio Sauce” “Bean Sprouts”
“Hanafu” “Chicken Thigh Chashu”,
and SORANOIRO’s “W soup” “Noodles made from 100% Domestic Wheat”,
and “Chicken Breast Chashu”.

Golden Corn Thicken SORA Champon

There is corn mixed in the noodles.
To bring out the flavour of the corn,
we have boiled it till soft,
so if you prefer to have them with a harder texture,
please kindly let us know.
For toppings, we have sweet and soft yellow types of
super sweet “Gold Rush”
With snow crabs from Russia as main,
we also have Chinese cabbage, string beans, marinated eggs,
and shoulder roast cooked in low temperature.

Mushroom SORABONARA

We have made the dream collaboration with Chef Okuno from the famous Italian restaurant “La Brianza”
come true!
Our store owner Miyazaki has always wished to make the combination of
mushroom noodles and carbonara together.
Within the noodles, we mixed it with truffle salt,
as well as truffle oil, then we can put that aside.
And then, we will make it carbonara-like, by crushing the egg.
Lastly, we will add the soup filled with aroma of porcini mushroom,
and the mushroom ramen will be complete!

Gyorai NOIRO

The last collaboration this year,
will be the Gyorai @ Kasuga x SORANOIRO’s collaboration.
In SORANOIRO, we used Gyorai’s “2 year ripen high grade katsuobushi dried bonito”
and after putting it in a drip coffee maker,
we add to the soup and created the “2 year ripen high grade katsuobushi Shio Chinese Soba”
For toppings, we will provide Gyorai’s
Nagano’s famous “deep fried sanzoku” bonito jelly (flavour changing items)…etc
In order to feel the aroma from the spicy sauce mixed with fish powder,
we will provide it in a separate dish.

Red SOY Tomato Soba

SORANOIRO collaborated with Ippudo x Men no Bou Toride at the Tokyo Ramen Show,
and created and arranged it to provide this to everyone.
The soup is made from soy milk, tomato, and clear soup.
For the noodles, we used noodles made from clams.
Although we don’t use buckwheat flour,
you will be able to experience the texture from cocoa and rye.
For toppings, we have cartilage balls, ratatouille,
crunchy cheese, bacon, and green onions.
For those who like spicy, we have prepared non-sour habanero as well.

Chihiro Miyazaki's Year End Soki Soba

Miyazaki who has always wished to open a store in Okinawa,
was thinking about Okinawa and created “Soki Soba”.
For noodles, it is made with Watanabe’s special Okinawa noodles.
As for soup, it is made from pork x chicken bones x dried bonitos.
We use zero oil, but please enjoy the thick taste.
For toppings, we have cartilage soki that you will be able to eat to the bone,
Okinawa’s grapes, green onions, as well as boiled cherry tomatoes from Ehime Prefecture.
