In the ramen industry, there are shops where they make ramen that resembles instant noodles. I wouldn’t say that is bad, but,
do you actually want to make instant ramen?

Or do you want to optimize the possibility of ramen, and create a new culture for food?

I have created a new ramen category “Veggie Soba” since I have started my business in 2011, as I was trying search for new possibilities for ramen.

When we mention ramen, we usually have the image of males, volume, and unhealthiness,
so we have approached a friendly and frank customer service with a cafe-looking exterior and interior design,
and healthy menus like veggie soba, which ladies would even be able to visit alone.

Then, with the opportunity of going to France in 2014, we were the first to add the vegan menu to the grand menu in Japan which was mainly targeting vegetarian customers,
and after meeting the farmers in Shimane in 2015,
we started handling “brown rice noodles”,
and added the gluten free menu to the grand menu mainly for those with wheat allergy and celiac disease.

In 2019, we have renewed the main store, and started the muscle ramen for athletes.
we have continued our special limited ramen ever since we started the business, and within 8 years we gave created more than 200 different types (including one-day limited menu) of limited ramen, and used a lot of ingredients as well.

With this, we have expanded the range of this industry to allow those who don’t usually eat ramen to start eating ramen.

We basically prepare our dishes in store in SORANOIRO, so perhaps we have a lot more ingredients used comparing to other ramen stores.
This is a learning place for people who are working there.
Usually you wouldn’t be able to learn about new ingredients from other ramen stores, but you will in SORANOIRO.
Also, maybe the day when customers can try your limited special ramen will come.

I want to widen the perspective of our customers who try our ramen,
develop in the ramen industry, and heap it up as well.
So I wish to gain more comrades who can share the same thoughts as I do!
In addition, I want to bring ramen stores to a higher status that could spread around the world.
